About the Recipe
Our Wild Rosemary Ostrich Kebab is a taste of South Africa’s untamed spirit. Think tender cuts of lean ostrich, kissed by the earthy aroma of wild rosemary and grilled to juicy perfection.
It’s bold, beautifully balanced, and made to be shared, just like every great Food Jam. Pair it with good company, a glass of local red, and let the flavours do the talking.

Ingredients
Marinade
1 tbs apricot jam
30 ml vinegar
60 mls brown sugar
2 cloves garlic
Rosemary
Kebabs
600 gm ostrich fillet
10 dried apricots
Onion quartered and separated
Preparation
Whisk ingredients for marinade together.
Cut ostrich steaks into cubes and marinate for 30 minutes.
Place ostrich on a rosemary stick with onion and apricots.
Cook on an open flame for maximum flavour for 10 minutes or cooked just the way you like it!
