About the Recipe

Crispy potato cubes with smoky, spicy tomato sauce and garlicky aioli.

Ingredients

4 medium potatoes, cut into 2–3 cm cubes

Olive oil, for roasting

Salt & pepper


For the bravas sauce

2 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

½ tsp smoked paprika

¼ tsp cayenne pepper (optional for heat)

1 can (400 g) chopped tomatoes

1 tsp sugar

Salt & pepper


For the aioli

3 tbsp mayonnaise

1 small garlic clove, minced

½ tsp lemon juice

Preparation

First, get your favourite drink to keep yourself hydrated — maybe a chilled Spanish soda?


  1. Preheat oven to 220°C. Toss potato cubes with olive oil, salt & pepper.

  2. Roast on a baking tray for 30–35 minutes until golden & crispy.

  3. Meanwhile, heat olive oil in a pan. Cook onion & garlic for 5 minutes.

  4. Stir in paprika & cayenne.

  5. Add tomatoes, sugar, salt & pepper. Simmer for 15 minutes, then blend smooth if you like.

  6. Mix mayo, garlic & lemon juice for the aioli.

  7. Pile potatoes on a platter, drizzle with bravas sauce & aioli. Serve warm.
